Hueston will replace outgoing coach Nick Brown, who stepped down last week due to family reasons, at the end of the season.
It is a big coup for the Eagles, with Hueston set to join wife Erynn, who coaches A, B and 17-and-under grade netball at the club as well.
Hueston, 38, will tackle the new role as coach in a playing capacity, which will benefit the talented youth at Central Park Reserve.
The Echuca United premiership player and former coach said he was looking forward to getting back into the leadership role at Shepparton East.
"I felt it was the right time to jump back in and I'm excited for the challenge ahead," Hueston said.
"And I felt it was the best fit for my family as well, with Erynn being at the club too."
Hueston kicked 19 goals in 17 games for Shepparton East last year when it played in the Murray league.
The forward returned to his junior club Shepparton United this year, playing three games before taking a break then rejoining East just before the June 30 clearance deadline.
He made a surprise appearance for the Eagles in their superb 25-point win against Girgarre on Saturday.
It was the fifth win for Brown's side this season and at the forefront was teenager Aidan Lloyd, who booted four goals.
Fellow youngster Darby Innes-Irons was the standout for the Eagles, playing a key role on Girgarre's Billy Barnes.
Shepparton East president Mark Frost said he was excited to have Hueston sign on as coach.
"He brings a lot of knowledge and experience as a coach and a player," Frost said.
"It's great to bring him back to club and we couldn't be happier to have him on board."
Frost and Hueston made sure to thank Brown for the contribution he made to the club this year.
"Nick's done a fabulous job and we thank him for everything he's done for the club," Frost said.
"Nick built a very strong relationship with the players, especially the younger kids," Hueston said.
"The club's in a great position now and I'm excited to continue the work put in by Nick."
