“Our All-Time BBQ Hour is coming back again, and we have collaborated with Carnival Collective, so will be using their ranges and rubs in that,” Adrian said.
They will be working on traditional meats rather than game meats, so everyone will be able to get something out of the sessions.
The BBQ hour will also be a collaboration with another exhibitor, Victory Meats.
“It’s also a bit of a collaboration session with Vic the butcher,” Adrian said.
“He jumps in, and we finish it off together, and I really enjoy that collaboration between Vic and myself because we bounce off each other during his session.
“He quite often cuts something down off a carcase, and he’ll ask ‘would you quickly cook it up to give the guys a taste’ so we’ll continue to do that.”
On Saturday and Sunday, they will also be running kids’ sessions.
“The first session will be looking at one of Nana's recipes and my daughter (Lila, 13) will be leading that session with her cousin (Theo, 6) and they’ll be doing powder puffs,” he said.
“We will put out a big station where all the kids can come and make a variation of their own powder puff with different fillings and stuff, so it’ll be hands-on interactive.”
The second session will tap into a particular interest of Adrian.
“We’re going to look at Vegemite,” he said.
“I’m a huge Vegemite fan, so much so that my wife rolls her eyes at all the Vegemite ‘merch’ that I have acquired over the time.
“I thought I will tap into my passion for Vegemite, and we will go get nuts with Vegemite for the Sunday kids’ session, and I’ll be leading that one.”
For BBQ lovers or sweet toothed attendees, Secret Garden Catering’s talks are not one to miss this year.
Vegemite will be the shining star of the Sunday kids’ session.
