He knows where to source the finest produce.
He knows how to make the perfect cut.
So it’s no surprise he knew a prime location for expansion when he saw it.
Shepparton Family Butchers, located at 35 Vaughan St, opened its doors last Saturday, February 1, offering high-quality, locally sourced produce that would make any carnivore salivate at the glass-front display case.
Teaming up with the store’s new neighbour, Finer Fruit, also under new ownership, the two businesses have welcomed the Shepparton community by inviting them to celebrate their grand opening with daily giveaways, prizes and online competitions.
“There’s plenty to share around,” Mr Bourke said.
“We’ve already received a lot of support from new and old customers.
“Our shops have a strong business going, and we’re always busy.”
Since its opening half a century ago, Tatura Family Butchers has become a cornerstone of the neighbourhood and attracted meat buyers from Benalla, Shepparton, Nagambie, Seymour and Rochester.
Mr Bourke took over operations in October 2012, and in October 2023, his first expansion came as something of a jolt to him.
“When the opportunity came up to buy in Echuca, it was a spur-of-the-moment thing, and we had two days to decide and buy it,” he said.
“That wasn’t the case with the Shepparton store — I did my apprenticeship with Mark Ryan, who owned GV Meats here, years and years and years ago down at our local butchers in Nathalia, and I bought this space off him so he could kick back.
“It was just a matter of when it was going to happen.”
By acquiring the Shepparton location, Mr Bourke aims to enhance the already cut-above-the-rest operations of his growing enterprise.
“This shop has the physical size for us to do a lot of the processing here and branch it out to our other shops and make it a bit easier,” he said.
“Before opening a store here, many customers came from Shepparton to Tatura and Echuca.
“We have a pretty good following in each area we go to, so it’s good.”
The shop offers a variety of fresh cuts, house-made sausage flavours, marinated and brined items, home butchery supplies and everything needed for casual cooks to barbecuing buffs.
For an easy, hearty dinner, the business provides online meat ordering and delivery services spanning a large area of the Goulburn Valley — quality and convenience are the main ingredients.
“Whether ordering online or in-store, give us a go and see if you like us,” Mr Bourke said.
